Zesty Avocado Pepper Salad

8 c. fresh spinach leaves
2 avocados, diced
3 handfuls alfalfa sprouts
3 red peppers

1/4 c. plain nonfat Greek yogurt
1 medium lime, juiced
1/4 c. chopped peppers
1 T. fresh parsley, chopped
1 T. extra-virgin olive oil
Pepper to taste

1. Add spinach leaves to salad bowl
2. Slice avocado and pepper, add to salad
3. Sprinkle handful of alfalfa sprouts on top
4. To make dressing, use blender to mix all ingredients together
5. Pour over salad and toss to combine
