Cool off after class with this watermelon cucumber cooler! Perfect for hot summer days.
5 c. seedless watermelon
1 peeled english cucumber
1/4 c. fresh lime juice
2 tablespoons honey
Cucumber slices for garnish
1. In blender or food processor, puree the watermelon. Pour watermelon through mesh sieve over bowl and press with a rubber spatula (should produce 2 cups juice).
2. Repeat this process with the cucumber and combine watermelon and cucumber juice.
3. In a small bowl, stir lime juice and honey together. Add the mix to the watermelon and cucumber juice mix. Add more honey if desired for sweetness.
4. To serve, fill glasses with ice and pour in the watermelon cucumber cooler! Garnish with cucumber slices (optional).
